Gajar Halwa (Carrot Halwa)

πŸ₯•Β Slow-cooked, indulgent, and oh-so-satisfying!🍬


πŸ“ Ingredients:

  • πŸ₯• 4 cups grated carrots (about 4-5 medium carrots)

  • πŸ₯› 2 cups full-fat milk

  • 🍬 Β½ cup sugar (adjust to taste)

  • 🧈 3 tbsp ghee (clarified butter)

  • 🌰 ΒΌ cup chopped nuts (cashews, almonds, pistachios)

  • πŸ‡ 2 tbsp raisins (optional)

  • 🟑 Β½ tsp cardamom powder


πŸ‘©β€πŸ³ Instructions:

  1. 🧈 Heat ghee in a heavy-bottomed pan or kadai.

  2. πŸ₯• Add grated carrots and sautΓ© on medium flame for 5–7 minutes until slightly soft.

  3. πŸ₯› Pour in the milk, stir well, and cook on medium-low heat. Keep stirring occasionally.

  4. ⏳ Cook until the milk is reduced and absorbed completely (takes about 15–20 minutes).

  5. 🍬 Add sugar and mix well. The mixture will loosen slightly β€” cook until it thickens again.

  6. 🌰 Add cardamom powder, nuts, and raisins. Stir everything together and cook for another 3–5 minutes.

  7. ✨ When the halwa starts to leave the sides of the pan and looks glossy, it's ready!


🍽️ Serve Warm or Chilled
