π₯ 4 cups grated carrots (about 4-5 medium carrots)
π₯ 2 cups full-fat milk
π¬ Β½ cup sugar (adjust to taste)
π§ 3 tbsp ghee (clarified butter)
π° ΒΌ cup chopped nuts (cashews, almonds, pistachios)
π 2 tbsp raisins (optional)
π‘ Β½ tsp cardamom powder
π§ Heat ghee in a heavy-bottomed pan or kadai.
π₯ Add grated carrots and sautΓ© on medium flame for 5β7 minutes until slightly soft.
π₯ Pour in the milk, stir well, and cook on medium-low heat. Keep stirring occasionally.
β³ Cook until the milk is reduced and absorbed completely (takes about 15β20 minutes).
π¬ Add sugar and mix well. The mixture will loosen slightly β cook until it thickens again.
π° Add cardamom powder, nuts, and raisins. Stir everything together and cook for another 3β5 minutes.
β¨ When the halwa starts to leave the sides of the pan and looks glossy, it's ready!
Perfect with a scoop of vanilla ice cream π¦ or just as is!
