Proso Millet (Chena) Veg Khichdi

🍲 Organic Proso Millet (Chena) Veg Khichdi 


πŸ›’ Ingredients:

  • Β½ cup Organic Proso Millet (Chena) 🌾 (washed & soaked for 30 mins)

  • ΒΌ cup split moong dal or toor dal (optional for protein)

  • 1 small onion, finely chopped πŸ§…

  • 1 small tomato, chopped πŸ…

  • 1 cup mixed vegetables (carrot πŸ₯•, beans, peas, potato πŸ₯”)

  • 1–2 green chilies 🌢️ (slit)

  • 1 tsp ginger-garlic paste

  • 1 tsp cumin seeds

  • Β½ tsp turmeric powder

  • Salt to taste πŸ§‚

  • 2–3 cups water πŸ’§

  • 1 tbsp ghee or oil 🧈

  • Chopped fresh coriander for garnish 🌿

  • Optional: pinch of asafoetida (hing)


πŸ‘¨β€πŸ³ Instructions:

  1. Prepare Ingredients:

    • Wash and soak millet & dal for about 30 minutes.

    • Chop all vegetables and keep ready.

  2. SautΓ© the Base:

    • Heat ghee/oil in a pressure cooker or pan.

    • Add cumin seeds, let them splutter.

    • Add onion, green chilies & sautΓ© until golden.

    • Add ginger-garlic paste and stir for a minute.

  3. Add Veggies & Spices:

    • Toss in chopped tomatoes, turmeric, salt, and veggies.

    • Cook for 2–3 minutes until slightly soft.

  4. Add Millet & Dal:

    • Drain and add soaked millet and dal to the cooker.

    • Mix everything well.

  5. Cook:

    • Add 2.5–3 cups of water (more for softer consistency).

    • Pressure cook for 2–3 whistles (or simmer covered for 20–25 mins in a pot).

  6. Finish & Serve:

    • Once pressure releases, fluff gently.

    • Garnish with fresh coriander and a drizzle of ghee if desired.
