with the richness of mango and a hint of coconut! 🍛
🍚 1 cup basmati rice (soaked for 20 mins)
🧅 1 medium onion, thinly sliced
🫒 2 tbsp oil or ghee
🥭 ½ cup unsweetened Kesar mango pulp
🥥 ½ cup coconut milk (optional, for richness)
🧄 1 tsp ginger-garlic paste
🌶️ 1-2 green chilies (slit)
🧂 Salt to taste
🌿 ½ tsp garam masala or biryani masala
🌾 Whole spices (1 bay leaf, 2 cloves, 2 green cardamoms, 1 small cinnamon stick)
🥕 Optional veggies (peas, carrots, beans)
💦 2 cups water
🌿 Chopped coriander and mint for garnish
🔥 Heat oil/ghee in a deep pan or pressure cooker.
🌾 Add whole spices and sauté until fragrant.
🧅 Add sliced onions and sauté until golden brown.
🧄 Stir in ginger-garlic paste and green chilies. Cook for 1-2 minutes.
🥕 Add chopped veggies (if using) and sauté lightly.
🥭 Mix in the unsweetened mango pulp and stir well.
🥥 Pour in the coconut milk (optional) and cook for 2 minutes.
🍚 Add soaked rice, 2 cups water, salt, and garam masala. Mix gently.
🔄 Cover and cook until the rice is fluffy and water is absorbed (or pressure cook for 1 whistle).
🌿 Garnish with fresh coriander and mint. Let it rest for 5 minutes before serving.
